Ingredients
  

For the dressing and croutons:

  • 2 slices thick-cut bacon
  • 2 thick slices French bread cut into cubes
  • 1 Tbsp. olive oil
  • 1 medium shallot minced
  • 2 Tbsp. red wine vinegar
  • 2 tsp. Dijon mustard
  • Salt and black pepper to taste

For the salad:

  • 10 asparagus spears trimmed
  • Drizzle of olive oil
  • Salt and black pepper to taste
  • 2 eggs
  • 2 handfuls mixed spring greens arugula, or greens of choice
