“We made the beet root panna cotta with the intention of showing that foods that are normally served as savory can also be made sweet. The beets add a touch of earthiness to an otherwise very rich dessert, as well as a striking pink color for sake of presentation.”

Beet Root Panna Cotta

Camila’s Beet Root Panna Cotta

Ingredients
  

  • 8 oz. heavy cream
  • 1.5 oz. goat cheese
  • 3 oz. sugar
  • Pinch of salt
  • 1 small red beet
  • ½ sheet gelatin
  • Orange zest to taste
  • Chocolate for garnish
  • Orange slices for garnish

Instructions
 

  • Combine heavy cream, goat cheese, sugar, salt, and beet, and steep for 20 minutes.
  • After steeping, strain mixture and add in gelatin and zest.
  • Let set in the refrigerator until firm.
  • Garnish with chocolate and orange slices.
