Erica Wright’s Breakfast Quiche

“It fills me with a sense of love, pride, and honor knowing that what I started has become a special part of our family’s memories.”

What started as a simple breakfast quiche quickly evolved into a 20-year tradition for Erica Wright and her family. “This recipe is unique because it isn’t overpowered by eggs. Instead, the other ingredients take the lead, creating a more balanced and flavorful dish,” shares Wright. “Over time, it has become a favorite because it was made with love, feels hearty, and is perfect for bringing everyone together around the table.” Almost as important as the recipe itself is the company that comes with it. Each year, Wright gathers her family and close friends on Christmas morning for a holiday brunch. “We enjoy our breakfast quiche along with brunch beverages, then spend time playing Uno Attack, laughing, reminiscing, and telling stories from past holidays and vacations,” shares Wright. “It’s definitely a time filled with love and making memories.” Over the years, this flavorful breakfast quiche has become a prominent dish for the family, something they always expect and look forward to each holiday. “This dish is best enjoyed fresh and warm, served with fruit and a cold brunch beverage,” finishes Wright. “It’s the perfect combination for a relaxed, joyful meal with family and friends.”

Breakfast Quiche

Ingredients
  

  • ½ onion
  • 1 green pepper
  • 1 pack mushrooms
  • 1 lb. sausage can sub any meat or vegetable
  • 2 frozen deep-dish pie crusts
  • 6 eggs
  • 1 cup milk
  • Shredded cheese to taste

Instructions
 

  • Preheat oven to 375°.
  • Chop the onion, green pepper, and mushrooms. Sauté in butter or olive oil over medium heat until softened. Set aside.
  • Brown the sausage or your preferred substitute. Drain excess grease, if needed, and set aside.
  • Place both pie crusts in the oven and bake for 10-15 minutes, or until light golden brown. Remove and set aside.
  • In a mixing bowl, combine eggs and milk. Whisk thoroughly until fully blended.
  • Evenly distribute the sautéed vegetables and cooked protein between both pie crusts. Pour equal portions of the egg and milk mixture into each crust, and add one handful of cheese to each crust, or adjust to taste.
  • Gently stir ingredients in each crust to evenly distribute filling without spilling.
  • Bake for approximately 30 minutes or until a fork inserted into the center comes out clean. Allow pies to cool slightly before slicing and serving.
