Chocolate covered strawberry icecream pie

Chocolate-Covered Strawberry Ice Cream Pie

Ingredients
  

  • 1-1½ cup s fresh strawberries, sliced + extra for garnish
  • 2 pts. strawberry ice cream softened
  • 1 chocolate crumb crust
  • 3 Tbsp. butter
  • cup cocoa powder
  • cup sugar
  • ½ pt. whipping cream
  • 1 tsp. vanilla extract

Instructions
 

  • Mix sliced strawberries with softened ice cream and spread evenly in crust. Freeze for 1.5 hours.
  • In a saucepan, melt butter over medium heat. Mix in cocoa powder, sugar, and whipping cream. Heat until it boils.
  • Remove from heat and stir in vanilla extract. Let cool.
  • Pour over ice cream and put back into freezer.
  • Freeze for 2 more hours, then garnish with remaining strawberries.

Notes

Note: Can also be served with whipped cream by beating remaining cream with 2 tablespoons sugar and 1 teaspoon vanilla until soft peaks form.
