Ingredients
  • 1 Tbsp. onion, diced
  • 1 tsp. fresh garlic
  • 1 tsp. cilantro
  • 1 tsp. paprika
  • 1 Tbsp. red bell pepper, diced
  • 1/2 tsp. salt
  • 1/2 tsp. chicken seasoning
  • 1/2 whole chicken 

 

Directions

To make the marinade, blend onions, garlic, cilantro, paprika, bell pepper, salt, and chicken seasoning. Leave the half chicken marinating in the blended mix overnight (at least 12 hours). Grill at a low temperature for 40-50 minutes, flipping regularly to ensure even cooking.

Serve with charro beans, rice, and a small salad (lettuce topped with tomatoes, onions, avocado, beets, cucumbers, and a little bit of lemon juice as dressing). Now you can enjoy it with a cold and delicious horchata!
