Here, a local woman shares her favorite brunch dish – and the accompanying traditions that make it all the more special.

Annalee Vaccaro’s Eggs Avigliano

“For me, this recipe is really about the table. It’s about gathering, laughing, sharing stories, and being present with the people you love.”

Named after the Italian town where Annalee Vaccaro and her family are from, eggs Avigliano is a cherished recipe that has been passed down through the generations. “My grandparents shared it with my parents, and my mom continued that tradition by making it for us and keeping it part of our family gatherings,” she shares. In Vaccaro’s family, gathering together has always been sacred. From the time she was a young girl, the family always sat together at the table for meals, no matter how busy life became. Even preparing the dish is a family affair, with everyone pitching in, sharing tasks, and enjoying each other’s company in the kitchen. “Everyone is talking, sharing stories, and laughing. There are usually multiple conversations happening at once, and it’s loud in the best way,” Vaccaro says. “We sit, eat, talk, and often stay at the table long after the food is gone.” Inspired by her grandparents, parents, and extended family, Vaccaro plans to carry the legacy forward. “No matter what season of life I’m in, this tradition will always be something I cherish and want to continue,” finishes Vaccaro.

Annalee Vaccaro’s Eggs Avigliano

Ingredients
  

  • 1 tsp. olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 cups fresh tomatoes chopped
  • 1 tsp. oregano
  • 1 tsp. basil
  • Salt and black pepper to taste
  • Spinach to taste (optional)
  • Mushrooms sliced, to taste (optional)
  • Bell peppers chopped, to taste (optional)
  • 4 eggs
  • Mozzarella cheese for topping
  • Parmesan cheese for topping

Instructions
 

  • Heat the olive oil in a skillet over medium heat.
  • Add the onion and sauté until softened.
  • Stir in the minced garlic and cook for about 30 seconds, being careful not to burn it.
  • Add the chopped tomatoes, oregano, basil, salt, and pepper. Stir well and allow the mixture to simmer. If using, stir in the spinach, mushrooms, and bell peppers, and cook until tender.
  • Gently crack the eggs into the skillet, spacing them evenly over the tomato mixture. Cover and cook until the egg whites are set and the yolks reach your preferred doneness.
  • Sprinkle mozzarella and Parmesan cheese over the top. Cover briefly until the cheese is melted.
  • Remove from heat and serve warm, preferably with toasted ciabatta bread and butter.
