I took it to every tailgate when our four children attended the University of Tennessee, serve it at our annual Christmas and New Year’s parties, showers, and on any occasion to celebrate, and I always keep a batch in the freezer for any last-minute gatherings.”

Ingredients
  

  • 3 8 oz. blocks of cream cheese, softened
  • 3 cans mexi-corn drained
  • 4 cups taco or Mexican cheese blend grated (reserve ⅔ cup for the top)
  • ¾ cup mayonnaise
  • 1 jar jalapeños + half of the juice
  • Fresh jalapeño for garnish
  • Cilantro for garnish
  • Tortilla chips for serving

Instructions
 

  • Mix softened cream cheese with mexi-corn, cheese, mayonnaise, jalapeños, and jalapeño juice.
  • Place in a 11x13 greased casserole dish or three smaller dishes (this recipe freezes well) and top with reserved cheese.
  • Bake at 350° for 20-30 minutes until heated through and bubbly around the edges.
  • Garnish with fresh jalapeños and cilantro. Enjoy with tortilla chips!
