Ingredients
  

For the base:

  • ½ onion, chopped
  • A handful of king oyster or enoki mushrooms
  • 1 large carrot
  • ¼-½ head of broccoli
  • 1-2 bac ha (Giant Elephant Ear) stalks
  • 1 bok choy, halved
  • 2-3 small russet potatoes
  • ½-1 Japanese yam (can sub sweet potato)
  • 1-2 Tbsp. coconut oil
  • 1 cup protein of choice (optional)
  • 1 Tbsp. miso paste
  • 2-3 Tbsp. Maesri curry paste (optional)
  • ¼ cup soy sauce
  • 6 cups water
  • ¼ tsp. ginger
  • ¼-½ cup coconut milk
  • Frozen veggie dumplings (optional)
  • ½ package noodles or rice of choice

For the toppings:

  • Chili oil
  • Cilantro or parsley
  • Nutritional yeast
  • Green onion
  • Violet flowers

Instructions
 

  • Prep vegetables and potatoes by washing and chopping to desired size. You can leave the skins on all vegetables for more nutrients and less food waste.
  • In a large pot, sauté chopped onions in oil on medium heat until transparent.
  • Add remaining vegetables and optional protein and sauté for 2-3 minutes. Stir in miso paste, optional curry paste, soy sauce, water, ginger, and coconut milk.
  • Reduce heat to medium-low and simmer for 15-20 minutes or until vegetables are tender.
  • If using frozen veggie dumplings, add these 3-5 minutes before the soup is done. At this stage, you can taste your soup and adjust seasonings for a balance of acidity, saltiness, sweetness, and heat.
  • Prepare noodles or rice separately according to package instructions. Ladle soup over prepared noodles or rice. Dress with desired toppings and serve immediately!
