“This recipe was inspired from tailgating at Jimmy Buffett’s concerts and has been a favorite for some time because it is easy to prep at home prior to the event. This recipe makes about 30 wings bagged in marinade that can stay in your cooler while waiting to be grilled – it’s big on both flavor and convenience.”

Servings 30 wings

Ingredients

  • 30 chicken wings
  • Salt, to taste
  • Pepper, to taste
  • 1 large red onion, chopped
  • ¼ tsp. cayenne pepper (add more if you like things spicy)
  • 1 cup orange juice, with pulp
  • 1 lemon, juiced
  • 1 lime, juiced
  • 1.5 oz. tequila
  • 1 bunch cilantro, finely chopped

Instructions

  • After thoroughly cleaning the chicken wings, season with salt and pepper then split them into two large freezer bags (about 15 wings per bag).
  • In a large bowl, mix all remaining ingredients except for cilantro into a marinade.
  • Chop the cilantro and make three piles: one for each bag, and one to set aside and sprinkle on the wings after you have grilled.
  • Divide marinade and pour over the chicken in each bag, add one pile of the cilantro per bag, seal, and mix well. Place the sealed bags in a cooler and allow chicken to marinate at least one hour before grilling.
  • Cook on a hot grill while watching for grill flares that could burn the wings. Depending on the size of your wings, they will cook fast, and the skin will crisp up quickly.
  • Once cooked thoroughly, plate and sprinkle with remaining cilantro. Enjoy!
