O'Neil Classic Lasagna Recipe

Calvin & Denise O'Neil
“Calvin and I started making this recipe during COVID as a means of a quick in-home date night, which eventually turned into a staple recipe in our home. It’s fun and interactive to make, and the lasagna turns out extra cheesy and full of flavor. If you’re hoping to cook a meal with your boo, stick with something simple and classic like the O’Neil Classic Lasagna. You’ll find yourself making it again and again!”

Ingredients

  • olive oil
  • onion, chopped
  • garlic cloves, minced
  • ground beef
  • Italian sausage
  • tomato sauce
  • tomato paste
  • water (use the tomato sauce can)
  • oregano
  • basil
  • salt
  • black pepper
  • 15 lasagna noodles
  • mozzarella cheese, shredded
  • ricotta cheese
  • Parmesan cheese
  • Parsley, to garnish

Instructions

  • Preheat the oven to 350° and spray a large baking dish or lasagna pan with a non-stick cooking spray. Set aside.
  • To make the meat sauce, start with a large skillet, over medium-high heat. Heat oil, onions, and garlic for a few minutes, then add ground beef and sausage. Cook until meat is no longer pink and onions are tender. Drain grease, then return to pan.
  • Next, add tomato sauce, tomato paste, water, and seasonings. Bring to a boil. Cover, reduce heat to low, and simmer for 20-25 minutes.
  • While the meat mixture is cooking, using a large pot, cook pasta according to package directions for al dente, rinse, and set aside. Spray a large casserole dish with a non-stick spray then add a small amount of meat sauce to the bottom of the dish. After adding a layer of meat sauce to the bottom of the baking dish, add a layer of lasagna noodles.
  • Spread ricotta cheese on top of the pasta, add a layer of meat sauce and then sprinkle with Parmesan cheese. Next add mozzarella cheese and then repeat the layering process, ending with the remaining sauce then topped with mozzarella cheese.
  • To bake the lasagna, spray a piece of aluminum foil with a non-stick spray then cover the lasagna. Spraying the foil will help keep the cheese from sticking. Bake in preheated oven for approximately 50-60 minutes. Remove foil and cook for an additional 10 minutes.
  • Garnish with some parsley and serve this deliciousness with a glass of red wine.
