Authentic Eats: Dessert Edition

Chattanooga has gained notoriety in recent years for its growing ethnic food scene and for good reason. Restaurants representing far-flung corners of the globe are wowing diners with their quality ingredients and expert flavor combinations. While these establishments are dishing up their fair share of show-stopping mains, those with a sweet tooth fret not! Here, we highlight worldly desserts from some of the city’s top cultural eateries.

Rodizio Grill Hamilton Place's Pineapple Dessert

Ingredients
  

  • 1 Tbsp. butter
  • 1 cup freshly squeezed orange juice
  • ¼ cup water
  • 1 cup light brown sugar
  • 1 pinch ground nutmeg
  • 1 pinch ground cinnamon
  • ¼ cup orange liqueur
  • 1 pineapple, cored and sliced into 2-inch rings
  • Vanilla ice cream, for topping
  • Orange zest, to taste
  • Mint leaves, for garnish

Instructions
 

  • In a large sauté pan, melt butter, and then add orange juice, water, brown sugar, nutmeg, and cinnamon. Bring to a boil.
  • Add orange liqueur, and flambé until alcohol dissipates. Simmer for an extra minute before adding pineapple rings. Simmer for an additional 10 minutes with the pineapple, turning occasionally.
  • Place the pineapple rings on a plate and then divide the sauce between the servings, filling the core space (reserve a little to drizzle as a garnish).
  • Top each pineapple ring with a scoop of vanilla ice cream and a dash of orange zest. Drizzle the extra sauce on top, and garnish with a sprig of mint.
