Quick-Fried Apple Pies Recipe

From furniture and faith to collectibles and character traits, there are a lot of things that get passed down over the course of a family’s history, and recipes are no exception. But a recipe nurtured by generations of love and care is so much more than the food it creates. It’s also a reminder of the laughter and light that can happen when a family comes together.

“My love for baking stems from a rich family heritage. One of my favorites is my dad’s fried apple pies. As a kid, he made them for family gatherings. Often, he would load my brothers and me in his truck, drive to the old curb market in downtown Chattanooga, and sell them for a dollar a piece. Dad passed almost 20 years ago, but his fried apple pies are still enjoyed today.”

Ingredients

For the pies:

  • 1 8-count container refrigerated biscuits
  • All-purpose flour for rolling
  • 1 21 oz. can prepared apple pie filling
  • 1 cup water
  • Vegetable oil for frying

For the glaze:

  • ¼ stick salted butter melted
  • 1 Tbsp. corn syrup
  • 1 tsp. vanilla extract
  • 1 cup powdered sugar
  • ¼ cup milk of choice

Instructions

  • Remove biscuits from packaging and use all-purpose flour to roll out each biscuit to a thin circle, approximately 6 inches.
  • Place 2-3 tablespoons of pie filling in the center of the biscuit dough.
  • Using a pastry brush, lightly brush the edges of each biscuit with water, and then fold in half to close the pie. Use a fork to crimp the edges closed. (This prevents the filling from leaking out during the frying process.)
  • Place a cast iron skillet on medium heat and pour oil to approximately half-inch depth. Carefully place three pies in hot oil and cook until the edges brown, flipping pies over to complete cooking both sides. When a golden-brown color has been reached, remove pies to a cooling rack seated on a cookie sheet to catch drippings, and repeat process with the remaining pies.
  • While pies are cooling, mix glaze ingredients, adding milk 1 tablespoon at a time to achieve desired thickness.
  • Using a separate pastry brush, brush glaze liberally onto pies, and then again as they are cooling.
  • Best served warm alone or with vanilla ice cream and caramel drizzle.
