It’s a way to use some seriously tasty food to bring together friends and family.

Breakfast Tacos

 

Ingredients

  • 2 cups potatoes, cubed
  • 1/2 bell pepper, diced
  • 1/2 yellow onion, diced
  • 1/4 cup canola or grapeseed oil
  • 1 lb. breakfast sausage
  • 4-8 eggs (2 eggs per person)
  • Tortillas

 

Directions

To save time, prepare the vegetables before leaving home and store in a sealed plastic bag. Once on-site, heat oil in a skillet and warm to medium heat. If using cast iron, opt for canola or grapeseed oil, which have a high smoke point. Add potatoes, peppers, and onions to the skillet and sauté for 5 minutes. Add sausage to the skillet and cook uncovered for 10 minutes or until sausage is thoroughly cooked and potatoes are tender. Crack eggs directly into skillet and stir to combine. Cook for an additional 5 minutes or until eggs reach desired doneness. Serve on a tortilla with toppings such as salsa, shredded cheese, guacamole, or cilantro. Serves 2-4.
