Sourdough Loaf

Ingredients
  

  • 70g active sourdough starter
  • 320g warm water
  • 500g bread flour
  • 12g sea salt (or any salt you have available)

Instructions
 

  • Using a food scale (measuring in grams, zero each time you add a new ingredient), pour active starter, water, bread flour, and salt (add last) to a mixing bowl. Mix using a large spoon or your hands. The dough will be sticky and chunky. 
  • Cover the bowl with plastic wrap and let it sit out on the counter. Wait 30 minutes, then fold the dough. Fold the dough 3 or 4 more times, waiting 30 minutes in between folds.
  • After the final fold, cover the dough again and let it sit overnight at room temperature.
  • In the morning, on a floured surface, shape the dough, folding 3-4 times into a smooth ball. Place on parchment paper, cut into a circle with 5-6 slits on the sides, and place into a medium sized bowl. Cover the dough and let it rise in the bowl for 30 minutes.
  • Preheat the oven to 450°. Place an empty Dutch oven and lid into the oven to heat.
  • Take the dough and parchment out of the bowl and place on the counter. Dust a light layer of flour over the top of the dough.
  • Using a bread lame (or a sharp knife), score the top of the bread however you choose. This is the fun part! Place scored dough and parchment into the preheated Dutch oven. Place in the oven with the lid on for 25 minutes.
  • After 25 minutes, remove the lid from the Dutch oven and bake for an additional 25 minutes. For an extra crispy crust, you can bake the bread for a final 8 minutes directly on the rack. Let cool for at least 30 minutes before cutting into the loaf. Enjoy!
