Stuffed Sweet Potato Recipe

Ingredients
  

  • 1 sweet potato
  • 2 Tbsp. olive oil, divided
  • ½ tsp. sea salt
  • ½ cup riced cauliflower
  • ¾ tsp. taco seasoning
  • Salt and black pepper, to taste
  • ¼ cup Idaho potatoes, diced
  • cup green peppers, diced
  • cup yellow onions, diced
  • 1 avocado
  • Lime juice, to taste
  • 1 oz. salsa
  • 1 cup lettuce, finely shredded
  • 2 Tbsp. pico de gallo

Instructions
 

  • Scrub and dry the sweet potato. Rub sweet potato with 1 tablespoon of olive oil and sprinkle the potato with sea salt. Place sweet potato on a sheet pan and place into a 350° oven until cooked through.
  • Approximately 30-45 minutes depending on the size of sweet potato. While the potato is cooking, place riced cauliflower in a hot skillet with 1 tablespoon of olive oil and your favorite taco seasoning. Salt and pepper to taste.
  • Dice Idaho potatoes into ½-inch pieces and place into salted boiling water until cooked through but not mushy, approximately 10 minutes.
  • Remove from water and strain through a colander. Set cooked potatoes in refrigerator until ready to assemble.
  • Dice green peppers and yellow onions into ½-inch pieces and mix with cooked potatoes.
  • Make an avocado sauce by puréeing avocado, lime juice, salt, and pepper to taste, adding water until desired consistency.
  • Pan fry cooked Idaho potatoes, peppers, and onions until golden brown. Drain on paper towel. Split cooked sweet potato lengthwise and place on a plate.
  • Place warm cauliflower mixture on top of sweet potato and add pan-fried potatoes, peppers, and onions. Put a scoop of your favorite salsa on top and drizzle with avocado sauce. Add lettuce and top with your favorite pico de gallo.
