A good marinade can tenderize and add moisture to your meat while infusing flavor beyond the surface level, ensuring that each bite is perfectly delicious. With this recipe from local restaurant Zaya 1943, you can skip the store-bought stuff in just a few simple steps.

Zaya 1943's A5 Wagyu Marinade

Yields approximately 4 cups
Prep Time 10 minutes
Marinate Time 3 hours

Ingredients
  

For the marinade:

  • cup sugar
  • 1 cup sake
  • 1 Asian pear
  • 1 onion
  • ½ cup garlic
  • cup ginger
  • ½ cup sesame oil

For garnish:

  • ¼ cup sesame seeds
  • ½ cup chopped green onion

Instructions
 

  • Whisk half of the sugar into the sake and pour onto the meat.
  • Place Asian pear, onion, garlic, ginger, and sesame oil into a blender.
  • Blend for 45 seconds or until smooth.
  • Add the other half of the sake and sugar into the blender and blend until mixed well.
  • Pour blended ingredients onto the beef and marinate for 3 hours before cooking.
  • Garnish grilled meat by sprinkling sesame seeds and green onions on top.
