Breakfast Tacos

Sausage and egg breakfast tacos are the perfect breakfast to make while camping!

Equipment

  • Cast iron skillet

Ingredients
  

  • 2 cups potatoes, cubed
  • ½ bell pepper, diced
  • ½ yellow onion, diced
  • ¼ cup canola or grapeseed oil
  • 1 lb breakfast sausage
  • 8 eggs (2 eggs per person)
  • Tortillas

Instructions
 

  • To save time, prepare the vegetables before leaving home and store in a sealed plastic bag.
  • Once on-site, heat oil in a skillet and warm to medium heat. If using cast iron, opt for canola or grapeseed oil, which have a high smoke point.
  • Add potatoes, peppers, and onions to the skillet and sauté for 5 minutes.
  • Add sausage to the skillet and cook uncovered for 10 minutes or until sausage is thoroughly cooked and potatoes are tender.
  • Crack eggs directly into skillet and stir to combine. Cook for an additional 5 minutes or until eggs reach desired doneness.
  • Serve on a tortilla with toppings such as salsa, shredded cheese, guacamole, or cilantro.
