Mayan Kitchen's Pastor Marinade

Ingredients
  

  • 1 large tomato
  • 1 medium-size red pepper
  • ancho peppers
  • quajillo peppers
  • ½ large onion
  • cloves garlic
  • 3 bay leaves
  • Pinch of thyme
  • Pinch of saffron
  • Pinch of achiote
  • 1 pint pineapple juice
  • ¼ cup lard
  • 3 tbsp sesame seeds
  • 3 tbsp pumpkin seeds

Instructions
 

  • Blend tomato, red pepper, ancho peppers, guajillo peppers, onion, garlic, bay leaves, thyme, saffron, achiote, and pineapple juice until smooth, then pour into a large mixing bowl.
  • Over medium heat, pan-fry sesame seeds and pumpkin seeds in lard until the seeds are golden brown, then pour the contents of the pan into the blender and blend until smooth.
  • Pour the pepper mixture back into the blender with the seed mixture and blend until incorporated.
  • Let cool and use with your favorite protein.
