Penicillin cocktail from Whiskey Thief

  • Muddler
  • Cocktail shaker
  • Rocks glass
  • Fine strainer


  • 4 slices fresh ginger
  • 2 oz Jura 10-year Highland Scotch
  • ¾ oz fresh lemon juice
  • ¾ oz honey syrup (1:1 of local honey and water)
  • ¼ oz Caol Ila 12-year Islay Scotch

For garnish:

  • Lemon peel
  • Candied ginger


  • Muddle 4 slices of fresh ginger in a cocktail shaker and add Jura Scotch, lemon juice, and honey syrup. Shake to combine.
  • Pour Caol Ila into a chilled rocks glass and fine strain mixture over top.
  • Express a lemon peel over the drink and discard.
  • Serve over a large ice cube with a candied ginger garnish.
