BBQ Potato Skins Recipe

Servings 2 -4 servings

Ingredients
  

  • 2 baked potatoes
  • 1 cup smoked barbecue pork
  • Pimento cheese, to taste
  • Barbecue sauce, to taste
  • Sour cream, to taste
  • Green onion, chopped, for topping

Instructions
 

  • Bake potatoes using your preferred method.
  • Cut each baked potato into ¼ slices and scoop out some of the excess potato to make semi-circle boats. Flash fry the boats until crisp and golden.
  • Layer each boat evenly with smoked barbecue pork and pimento cheese, and then add to a broiler until the cheese is melted.
  • Top with barbecue sauce, sour cream, and green onion as desired.
