baked potatoes
1
cup
smoked barbecue pork
Pimento cheese, to taste
Barbecue sauce, to taste
Sour cream, to taste
Green onion, chopped, for topping
Instructions
Bake potatoes using your preferred method.
Cut each baked potato into ΒΌ slices and scoop out some of the excess potato to make semi-circle boats. Flash fry the boats until crisp and golden.
Layer each boat evenly with smoked barbecue pork and pimento cheese, and then add to a broiler until the cheese is melted.
Top with barbecue sauce, sour cream, and green onion as desired.
