Black Bean Burgers with Avocado and Pico de Gallo Recipe

Ingredients
  

For the patties:

  • 2 14-oz. cans black beans, drained, rinsed, and patted dry
  • 1 Tbsp. extra virgin olive oil
  • ¾ cup bell pepper, finely chopped
  • 1 cup yellow onion, finely chopped
  • 3 garlic cloves, minced
  • teaspoons ground cumin
  • 1 tsp. chili powder
  • ½ tsp. garlic powder
  • ½ cup bread crumbs
  • ½ cup feta cheese
  • 2 large eggs
  • 1 Tbsp. Worcestershire sauce
  • 2 Tbsp. ketchup
  • Pinch of salt
  • Pinch of pepper

For the toppings:

  • Avocado, thinly sliced
  • Trader Joe's Hot Pico De Gallo Salsa, to taste
  • Dave's Killer Bread buns, as needed

Instructions
 

  • Preheat oven to 325°. Line a baking sheet with parchment paper, and pour and spread beans evenly on it. Bake for 15 minutes until slightly dried out.
  • While beans are in the oven, sauté olive oil, chopped pepper, onion, and garlic over medium heat until peppers and onions are soft, about 5-6 minutes.
  • Place in a large bowl with the remaining ingredients. Stir everything together, and then add the black beans. Mash with a fork or potato masher, leaving some larger chunks of beans.
  • Form mixture into patties, about ½ cup of mixture each and about ½-1 inch thick. This should make about 6-7 patties. 
  • To bake the patties, place on a parchment paper-lined baking sheet and bake at 375° for 10 minutes on each side, 20 minutes total. Cool and store extra patties in the fridge. Serve with your favorite toppings.
