Black Bean Burgers with Avocado and Pico de Gallo Recipe

For the patties:
- 2 14-oz. cans black beans, drained, rinsed, and patted dry
- 1 Tbsp. extra virgin olive oil
- ¾ cup bell pepper, finely chopped
- 1 cup yellow onion, finely chopped
- 3 garlic cloves, minced
- 1½ teaspoons ground cumin
- 1 tsp. chili powder
- ½ tsp. garlic powder
- ½ cup bread crumbs
- ½ cup feta cheese
- 2 large eggs
- 1 Tbsp. Worcestershire sauce
- 2 Tbsp. ketchup
- Pinch of salt
- Pinch of pepper
For the toppings:
- Avocado, thinly sliced
- Trader Joe's Hot Pico De Gallo Salsa, to taste
- Dave's Killer Bread buns, as needed
Preheat oven to 325°. Line a baking sheet with parchment paper, and pour and spread beans evenly on it. Bake for 15 minutes until slightly dried out.
While beans are in the oven, sauté olive oil, chopped pepper, onion, and garlic over medium heat until peppers and onions are soft, about 5-6 minutes.
Place in a large bowl with the remaining ingredients. Stir everything together, and then add the black beans. Mash with a fork or potato masher, leaving some larger chunks of beans.
Form mixture into patties, about ½ cup of mixture each and about ½-1 inch thick. This should make about 6-7 patties.
To bake the patties, place on a parchment paper-lined baking sheet and bake at 375° for 10 minutes on each side, 20 minutes total. Cool and store extra patties in the fridge. Serve with your favorite toppings.
