Sharon Law's Easy Chicken Enchiladas Recipe

Ingredients
  

  • 1 cup chicken, shredded
  • 1 cup cheddar cheese, shredded
  • 1 cup green chiles, diced
  • Flour tortillas
  • 2 cans cream of chicken soup
  • ½ cup sour cream

Instructions
 

  • For the filling, mix shredded chicken, cheese, and half of the green chiles. 
  • Distribute filling mixture evenly between tortillas and roll like them up like burritos. 
  • For the sauce, combine cream of chicken, sour cream, and remaining green chiles. Pour half of this sauce in the bottom of a casserole dish.
  • Layer enchiladas atop the sauce in the dish. Pour remaining sauce on top and sprinkle with additional cheese.
  • Bake at 350° for 25-35 minutes, or until cheese is melted and toasted.
