Spicy White Bean Avocado Mash Recipe

Ingredients
  

For the mashed white beans:

  • 1 avocado
  • 2½-3 tsp. curry powder
  • ¼ tsp. sea salt
  • black pepper, freshly ground
  • 1 tsp. lime juice
  • ½ can cannellini beans

For serving:

  • 2 slices bread
  • Scoop of kimchi
  • ¼ chili flakes
  • Mayonnaise, to taste
  • Kimchi, to taste
  • Sriracha, to taste

Instructions
 

  • Add the avocado to a bowl and mash with a fork. Then mix in curry powder, sea salt, black pepper, and lime juice.
  • Rinse and drain the beans, then add them to the avocado mixture, gently mashing to combine.
  • Serve on two slices of toasted bread with a scoop of your favorite homemade or local kimchi and chili flakes. For a spicy drizzle, combine mayo with kimchi juice and sriracha as desired.
