Truffle Fried Mushrooms

Ingredients
  

  • 6 oz. rice flour
  • 1 tsp. kosher salt
  • 4 oz. water
  • 6 oz. your choice of mushrooms (cremini and shiitake are recommended), halved
  • 1 tsp. truffle oil

Instructions
 

  • Combine rice flour and salt in a bowl. Add water until you get a pancake batter consistency.
  • Add mushrooms, and mix until mushrooms are coated. Fry at 350°.
  • As the crust sets, gently separate and cook until crispy.
  • Add truffle oil to a large bowl, and toss cooked mushrooms to coat. Serve with your choice of dipping sauce.
