Ingredients
For the fries:

white truffle oil

Fresh herbs or microgreens, for garnish
For the truffle seasoning:
½
Tbsp.
garlic powder

truffle zest seasoning

kosher salt

black pepper

bourbon-smoked togarashi

bourbon-smoked paprika
For the garlic aioli:
3
cloves
garlic
Vegetable oil, to coat
1
cup
mayo
½
tsp.
kosher salt

tsp.
black pepper
½
tsp.
lemon juice

tsp.
lemon zest
Instructions
Turn the fryer to 275°. Blanch the cut fries for 5 minutes and then cool.
Turn the fryer to 350° and cook fries until golden brown. Remove from oil and carefully shake excess oil from the fries. Add fries to mixing bowl.
Mix all truffle seasoning ingredients, then add ½ teaspoon of truffle seasoning and truffle oil to fries and toss to coat. Add to your serving bowl.
Top with Parmesan cheese and garnish with herbs or microgreens. Start the garlic aioli by coating three cloves of garlic with vegetable oil.
Roast cloves until tender. Purée the garlic, mix in remaining garlic aioli ingredients, and place in a bowl for dipping. Enjoy!
