Cube fresh peaches. In a large saucepan, add the sugar and brown sugar, and cook on medium heat until sugar dissolves, about 5-10 minutes.
Then add in the peaches, cinnamon, and vanilla extract and mix to combine. Cook until the peaches break down, about 10 minutes, then remove from heat and let the mixture cool for a few minutes.
Then add two heaping spoonfuls of the peach filling into each taco shell and top with vanilla ice cream. Drizzle each taco with caramel sauce and serve immediately.
