Katsu Scotch Egg
Attack of the Tatsu
These marinated soft-boiled eggs are wrapped with a savory soy ground beef mix, crispy breading, and fried to perfection.

- 6 eggs
- 1 cup seasoned flour
- 1 cup egg wash equal parts egg and water
- 1 cup panko breadcrumbs
For the soy beef mixture
- 1 lb. ground beef
- 6 g ginger minced
- 4 g garlic minced
- 3 g salt
- 8 g sesame oil
- 3 g scallions
- 30 g soy sauce
Boil the eggs for 6 minutes.
Let them chill and then peel.
Combine all ingredients together for the beef mixture.
Wrap 1.25 ounces of beef around each peeled egg.
Dip the beef-wrapped egg in flour, coating completely.
Then, dip in the egg wash and coat with panko.
Fry the breaded eggs in 350° oil for 5 minutes, or until the center is warm (take care not to overcook).
