Ingredients

lemon juice, freshly squeezed

dijon mustard

garlic cloves, roasted or minced

dried oregano or fresh dill, minced
kosher salt, to taste
black pepper, freshly ground, to taste

extra virgin olive oil, preferably Greek
Instructions
Mix all ingredients aside from the olive oil in a large bowl or blender.
While whisking briskly, slowly stream in olive oil to emulsify.
Notes
Marinade can be stored in an airtight jar for up to 1 week in the refrigerator. Shake before using.
