Seasonal Kale Salad Recipe

This kale salad, tossed with dressing and seasonal produce, is a perfect side dish or addition to your favorite wrap.

- 2 cups olive or canola oil
- 1 cup red wine vinegar
- ½ cup sugar or honey
- 16 oz. kale
For the toppings
- Blueberries
- Raspberries
- Strawberries sliced
- 6 oz. feta cheese crumbled
- 3 oz. pumpkin seeds
Whisk oil, vinegar, and sweetener of choice together until the dressing is formed.
Assemble salad with remaining ingredients, tossing together fruit, feta, and pumpkin seeds.
Add dressing to taste.
