Ingredients
  

  • 1 lb. salted butter, room temperature 
  • 5 whole preserved lemon peels, finely diced
  • 50g fresh chives, finely chopped
  • 75g raw shallot brunoise 
  • 5g dried parsley 
  • 5g dried thyme

Instructions
 

  • Combine all ingredients in afood processor.
  • Tip: Compound butter is the best way to season a dish perfectly. You’ve already controlled the spice and salt ratios ahead of time, so you’re not having to eyeball the right amount of seasonings separately while you’re making the food.
